Disclaimer: In these workshops I will discuss the slaughtering and butchering of young livestock, and the use of their stomachs to make rennet. I will use animal rennet to make cheese, and possibly discuss or demonstrate the use of plant coagulants such as thistle. It is a major part of my philosophy that there is no vegetarian milk or cheese. If you are uncomfortable with these topics, maybe the workshops are not for you.
5 day workshop in New Mexico
Held near Albuquerque at Polk’s Folly Farm , this workshop is a collaboration with the New Mexico Cheese Guild. We will work with the raw milk of a small crew of goats, that you can hang out with, or even lend a hand during milking time. Held in Glenns Ferry at Wild Spaces Farm, we will make cheese from the onsite herd of Jersey cows.

Methow valley, WA workshop post - Saskatoon Circle
After Saskatoon circle, I will hold this workshop with Katie Russell close to the site of the gathering in Methow Valley, NE Washington. It be will at her ranch, where students can camp out, and share meals. We will work with both cow and goat milk, crafting handmade cheeses using a starter we will cultivate from raw milk.

5 day Workshop in the Sierra Foothills with Wondernut Farm
I return to have a second workshop with the Wondernut crew at this super chill farm that is also a Hip Camp host. We will transform udder fresh goat and sheep milk from the flock, and talk all about how milk becomes cheese.
Cost for 5 days with lunch is only 600$ if you sign up before March 14. Then it will be 750$.
There are various lodging and camping options, and strongly recommend staying onsite. It’s a fun communal vibe, and will give you more of a retreat experience.

workshop with Brambletail homestead at Green Valley Farm near Santa Rosa, CA
Over the course of 5 days we will work with the rich Jersey cow milk from the herd living here, and make a range of cheeses. This high fat yellow pigmented milk made juicy mozzarella when I taught here last year.
The cost is 650$ for 5 days with lunch and lodging is available in the historic farmhouse where we have the event for 200$ a night.
